Prepare Chicken
- Chicken should be boiled whole for sweeter meat inside

Place the chicken back in the pot, add 1 onion, and add the prepared spice pouch

Reduce heat to level 3/9, boil the chicken for 20 minutes in gently simmering water

Once cooked, remove chicken and soak in ice water to tighten the skin and make the meat white
Remove the meat. Put the bones back in the pot, set heat to 1/9 and simmer for another 1-2 hours to extract more sweetness from the bones
Once the chicken cools, shred or slice into bite-sized pieces
Thinly slice onion, finely chop scallion

Blanch noodles in boiling water, then place in bowls to keep warm while eating
